





People are always asking me, "What do you guys eat?" and "Can you give me some recipes?". So this year I am going to include more meals, snacks, and recipes. I am actually planning to record everything I eat/drink for 2 weeks and include it all on my blog. (Hopefully this will start soon) It will be a way to share recipes and helpful tips I have learned over the years that have helped me to prepare fun, healthy meals for my family while sticking to my DAVE RAMSEY budget.
My favorite health guru is Jordan Rubin. He is the author of the book "The Makers Diet" among many others. He has a remarkable story of healing, and he has dedicated his life to helping others to experience healing and health. I would encourage you, if you are serious about getting healthy and really changing your lifestyle regarding your health, read one of his books (and take notes). I first read his book in April of 2006 and I loved everything he had to say, but it has been a slow process to really live how he teaches. And the process continues. Each small step keeps me going in the right direction. I have since read all of his books, really studying them and taking notes and talking about them with others helps as well.

So for today's recipe...............
TACO SALAD
Ingredients:
Organic Romaine Lettuce (2)
2 Peppers (Any Color)
1 Onion
Tomatoes (The boys pick out the tomatoes)
1 lb. ground turkey (organic, grass-fed) (I get from a local Amish farmer)
Tortilla Chips (I use organic, blue corn tortilla chips from Archer Farms (TARGET))
12 oz Organic Raw Cheese (I get from a local Amish farmer) (We are out of this today, so no cheese in our salad today)
French Dressing (If wanted) (Organic or natural without HFCS) (Justin uses Salsa)
I make a home-made seasoning to use as "Taco Seasoning" for the meat. This is similar to the little packets you can buy from the grocery store to season meat.
Here's the recipe: (per 1 lb. of meat)
Taco Seasoning:
Onion Powder 1/2 tsp.
Sea Salt or Pink Salt 1/2 tsp.
Chili Pepper 1/2 tsp.
Paprika 1/4 tsp.
Garlic Powder 1/4 tsp.
Cumin 1/4 tsp.
Oregano 1/8 tsp.
Cayenne Pepper 1/8 tsp.
After cooking the meat, I pour it into a strainer in the sink, and I use a big glass jar to press down on the meat to push out most of the juice/fat. Then I put the seasoning on the meat and stir.
For the final product, Mix everything into a BIG bowl and serve. We add dressing individually because most of my family doesn't like dressing.

How great to find your blog! Happened unintentionally, but I'm glad I did. Appreciate how you are sharing recipes, and other day to day things that we all can relate to. I have seen the Maker's Diet book before and wondered if it would be any good. SOunds like I need to pick it up soon. Was great to see your "non-resolutions" goals typed out, too. That day of rest is something i have been seeing as more of a need to prioritize, too. So easily lost if you don't plan it. triathalon, huh? that's awesome! I so would be up for it-if I swam!! by hubby starting doing them last summer and plans to do so again this year. Do you know which one you'll do yet?
