My mom used to make Sloppy Joes when I was a kid, and they were one of my favorites. As an adult I didn't make them for years because I thought they were too unhealthy. But a couple years ago, I had my mom's sloppy joes again and I was reminded how good they tasted, so I thought I would alter the recipe and make them for my family. This is my version of Sloppy Joes.
Recipe:
1 lb. ground chicken
1 can tomato paste (15 oz.)
1 small red pepper
1 small green pepper
1 small onion
1/2 cup water (or more for desired consistency)
2 TBLS apple cider vinegar
1-2 tsp. Honey
Seasoning Powder Mixture:
1/2 tsp. onion powder
1/2 tsp real salt
1/2 tsp. paprika
1/4 tsp. chili powder
1/4 tsp. cayenne pepper
1/4 tsp. garlic powder
Brown chicken in pan, then drain grease from chicken, and put it back into the pan on very low heat. Add tomato paste, water, vineager and honey. Stir really good and let simmer. In seperate bowl, mix seasoning, then mix into chicken. Let simmer and keep stirring. Chop up onion, green and red peppers very finely. Remove chicken from heat. Mix raw vegys into mixture really good. Serve on buns or as my kids and I do, eat with potato chips!

Hey - Is there a reason you would use ground chicken and not ground turkey?
No reason. I actually use both. I have a great local farmer that I get all my meat, eggs and milk from. So it is organic chicken, and he also has organic turkey, lately I just have gotten chicken, but i think it taste pretty much the same!
